    Had 4 pigs taken to be processed at hatchs custom meat cutting on August 20th 2024.He ruined all 4 pigs and claims he is not responsible!. The ham does not look or taste like ham. The **** portions are missing. Did not cut or smoke properly any of the complete order. He put the hearts and livers in the sausage ruining it. He also delayed having my order done for three weeks past when he said it would be done.

    My name is ***** *****, owner of Hatch's Custom Meat Cutting. We are a state inspected slaughterhouse, processing facility. On August 20th, 2024, ****** ********* and his partner **** *** brought 4 pigs to the facility to have slaughtered and processed. On receiving the pigs, we went over the cut sheets. ****** had 3 pigs, and his partner had 1. The forms were filled out together. On the smoking of the hams and bacons. I informed both of them that we are in the first stages of smoking. This is new to the facility. We have been experimenting on hams and bacon for ourselves. Until we know we have it down. Before we offer it to the customer. In turn, I explained this to both parties. I offered to take the product to another facility that I have been using in the past to do all my smoking. Both Mr. ********* and his partner offered their hams and bacons (volunteering them) for us to use in a trial run.
    After we slaughtered the pigs on the 20th. We started processing them on Monday the 26th and finished on the 27th. The product was boxed up and put into the freezer. Mr. ********* messaged me on the Sept. 3rd Tuesday and asked about the pigs. I told him everything is done, except the smoking. (The smoking takes about a 2-week process.) I told Mr. ********* that I was waiting on a shipping of ingredients. Which were back ordered. On the 16th of Sept. he messaged again about the smoking. I told him I was still waiting for the shipment to come in. On the 28th he messaged again about the smoking. I replied that the smoking was done and ready to go. On the 30th of Sept., he messaged me saying that the hams were terrible. They were no good. Not even for dog food. That day I received a phone call from his partner. With in the first to sentence he started bad mouthing me, say he was going to run my name and business into the ground, and tell everyone. In response to him verbally attaching me over the phone. I responded back I said my own words to him. But also tried to reason with him and make it right by him. Which I reminded him that they volunteered their product for the test run. I looked into the matter on what happened. My employee that is helping me with the smoking said that the hams and bacons fell off the hooks and landed to close to the heating elements. Which over cooked the product. I returned Mr. ********** partner phone call explaining what happen. And again, verbally attaching me on the phone. I offered to replace the product, which he agreed at first. I asked how the rest of the product was. He told me that everything else was fine. Except that I cut off too much fat off the pork chops. As he wanted a 1 inch of fat on them. I apologized for that was my mistake. Through text messaging, I offered Mr. ********* and his partner $800.00 return. There was no response to the text on Oct. 5th. I had no other communication with Mr. ********** only through text messaging.

    Mr. ********* claims on grinding the hearts and livers into the sausage is false. As there are saved out, cut up and packaged for the customer if they want them.
    Timely manner on the finished product. I explained that we were waiting on ingredients to be shipped.

    Also, in response to ****** ********** claims. I offered $800 back, but I wanted the product returned so that I can examine it. And see for myself what the issues was. There was no response after this text message or phone call in return. As there were no issues communicating through text leading up to the last text.
