      I purchased smoked polish sausage from the **** market on Main St in Williamsville this afternoon. It was heated in boiling water. Upon serving my wife found some type of parisite that I would describe as a miniature salamander with a very ling tail. Upon inspection of the yet unserved portions I found additional evidence of some sort of parasitic infestation. The evidence is found between the meat and the inside of the skin.
      The package was sealed and cold when purchased. There is no evidence that this infestation occurred at the store. The package has a stamped date of Nov 26.
      To say that we were disgusted is an understatement. My wife and I are so put off by this expierence that I cannot put my thoughts into words. By the pics attached, you can clearly see that this is NOT a one of event but a horrible lack of quality control. This is too bad since for the entirety of my dating my wife and our marriage my wife insisted on Wardynski sausage.
      I am sending this email to let you know that you have some sort of parasitic problem, I hope that you take corrective action. I am copying someone at **** Markets for the purpose that they are aware that there may be an issue with this particular lot of sausage.
      I have refrigerated the samples that are included in there photos for future investigation/reference. Please feel free to reach out to me if you would like further information.

      We reached out to Mr. ***** 2 x with email and received no response.  Attached is the results to letter we received in the mail to you.

      On 10-17-2022 a customer complaint was received from ******* **** through **** Markets Main Street Williamsville. Mr. **** stated through e-mail that he had purchased packaged smoked polish sausage. Mr. **** stated that he had heated the sausage in boiling water. He served his wife the sausage and found what he described as a parasite (what looked like a salamander) in the sausage. He also stated that he found what looked like a portion of the parasite along the packaging and the skin of the sausage. He also stated that the package was purchased sealed and cold at the store and felt that this did not happen at the store. The package has a stamp date of Nov. 26 (I believe this to be sell by date). 

      An investigation off all polish sausage produced for the sell by date Nov. 26 was conducted and no product has been found to be adulterated. Pictures were never received from Mr. ****. We have sent out e-mail(s) to Mr. **** and he has not responded to date.  On Oct.15 2022, a letter from Mr. **** was sent to the Better Business Bureau, Amherst NY. We received the letter from BBB 10-20-2022. This was prior to any report that was received from Mr. ****. I believe if Mr. **** would have contacted F. Wardynski & Sons Inc., we could have resolved the incident. 

      It appears after investigating what Mr. **** and his wife found on the natural hog casing is call a whickered casing. Natural casing has natural intestine strands along the intestine. These strands hold the intestine in the animal's gut. There are two types of natural casing (hog intestine) that the manufacturing process can use, whiskered casing and none whiskered casing (the strands are removed from the intestine, this removal increases the cost of the casing when purchased). Most times these whiskers shrink during the cooking process and does adhere to the outside of the casing. When the sausage is cooking (boiled) this can release the whiskers along the exterior of the casing. Once you cut the product, you can then have the whiskers being introduced to the interior of the meat area. 

      The product is wholesome and can be eaten, this is not what we would like our customer(s) to see. This is a quality appearance issue. We are sorry Mr. **** and his wife had a bad experience with the natural casing fully cooked polish sausage.
