    12-13-24 picked up the meat from a beef cow that I had Brocks put down. Live weight the cow weighted about 2000 pounds. The cows hanging weight 966. I should have received about 580 pounds of meat. I received 199 packages of meat, the packages are 2lb packages but not.filled to 2lbs of.meat in them. About 40% of them were filled just over a pound. I.roughly received 300 pounds of meat from Brocks Butchers. I want 280 pounds of burger or I want $300 refunded.

    We do not know the live weight of the animal. What we do know is that the animal was overfinished. Unfortunately, it had thick amounts of fat throughout. The hanging weight was 966. Ms. ****** had the entire beef put into hamburger. Which is accredited to a more significant loss as you lose bone weight from steaks, roasts, and soupbones. On an average beef with a traditional cutting order, you can figure on getting a 50%-60% yield of your hanging weight. ********** had everything put into burger so her yield would not fall in the 50-60% category. ********* claims to have only received 300lb of meat. Ms. ****** was given eight large crates of meat (she confirmed she did receive eight crates in our written correspondence). These crates hold roughly 55 pounds of meat each. With this estimation, she should have received around or close to 440 lbs of meat. She yielded around 45% of her hanging weight, which is still a pretty good yield considering her fat loss.  regarding the packaged wts. We do not weigh out exact weights unless requested, and an additional fee is paid. We do try to estimate close to their desired weight. In our 14 years of business and experience with over-finished animals we are satisfied if we achieve high 30%  yields to low 40% yields with beef of this magnitude.After reviewing the hanging weight and what we trimmed, two large barrels of bone and fat (average beef does not fill one whole barrel) and two more barrels were filled with guts, blood, and other ********* waste.   There was an overly excessive about of waste on this beef from being overfinished (fat, bone, head, hide, guts, blood, and other ********* waste) we left two gut barrels on the farm so she was not charged a $20 rendering fee for those. We did not charge for the excessive amount of extra rendering waste (extra whole barrel) $20. We did not charge an extra trimming fee of $150. As animals of this size take twice as long to trim and process than the average beef. She was not charged a fuel charge of $75 per her request. Being that she helped hook up the trailer and pulled a short distance to her farm because our subcontracted on the farm Butcher broke down just before her farm. She was given a $245 break in total. We know that we did this job to the best of our abilities with the condition of the animal. We do trim fat mindfully to ensure the best quality product to the consumer.

    Lets start with the first few sentences. When a roast is cut out of a carcass then weighed, its weight is 5lbs it stays 5lbs. When you grind the roast into burger it still remains 5lbs. 

    You cut a steak with a bone in it from a carcass and it weighs 5lbs with the bone in once you take the bone out it will weigh a little less. But this isn't about steaks I wanted cut. This is about a cow's hanging weight of 966 pounds. As ***** stated in his response, I should have received 440 pounds of burger which I did not.

    Next, I did receive 8 crates like I had states. I'm not denying that. I am explaining the number of packages of burger I received. The total amount of meat I received which is NOT 440 pounds. There was a total of 199 between the 8 crates. Thats roughly 25 packages in each crate. Which 25x8=200 packages which I counted 199 packages. As of today, I have used and weighed about 30 packages. All have weighed in about 1.05lbs to 1.15lbsof burger in each package. 3 so far were at 2lb package mark.

     

    Simple math with 199 packages roughly 15 packages at 2lbs=30lbs

    199 packages-15 packages is 184 packaches left

    184 packages x *****lbs = ******lbs

    30lbs + ******lbs = ******lbs TOTAL 

    I have received 25% of the hanging weight of my beef ******lbs. NOT 45% 440lbs like ***** claims.

     

    He states the crates hold 55lbs of meat. Well if the packages were a true 2lbs each and 25 packages in each crate your still at 50lbs not 55 lbs as he claims. 

     

    Per our conversation over the phone there is no extra fees for placing all burger in 2lb packages. 

    There is no sign stating an extra fee for placing in 2lb packages. 

     

    ***** explained $300 fee to come to the farm to slaugher beef and remove all waste. $75 travel fee just to drive to the farm. 

    There are no barrals of waste at my farm that was left like he stated. But the man left the cow head behind. 

     

    I looked at the **** of Agriculture, trade and consumer protection - Livestock Carcass Disposal. Brocks hired hands are suppose to take ALL waste and that was not done here. He might want to read those laws. 

     

    There was no mention over the phone extra $150 fee for fat trimming fat. There is no such sign in his shop. 

     

    But there is a ad on his page for beef talo for sale 2 days after i picked up my beef. 

     

    Your hired hands trailer broke down, yes. I had to use my equipment to go get him and his equipment. I only see it was fair to take $75 off the bill. 

     

    All this being said this is about simple math and counting the facts. I have a lot less beef then what i should have received. ***** even said i should have received 440lbs not my measly 241lbs.
